EMIRATI Dish
Vegetable Broth
Ingredients:
- 3 onions
- 2 medium tomatoes
- 2 potatoes
- 2 carrots
- 2 green peppers
- 1 small squish
- 4 zucchinis
- 2 eggplants
- 2 hot green jalapeno
- 1- ½ punch green coriander
- Curry leaves
- 2 spoons ghee and oil
- 2 spoons crushed ginger and garlic
- 1 cup coconut milk
- 1 spoon mixed spices
- Salt
- Tomato Sause
Steps:
- chop all vegetables into medium-sized pieces including onions.
- in a stockpot over medium-high heat, melt the ghee and oil, add all the vegetables including the crushed ginger and garlic, and cook, while stirring add salt and cover the stockpot.
- once the vegetables are almost cooked, add coconut milk and spices, let simmer for 40 minutes, and stir in between then.
