Gulf Dish
Chicken Kabsa
Ingredients:
- 1 whole chicken
- 4 cups basmati rice
- 3 chopped onions
- 2 dried lemons
- 1 hot jalapeno
- 1 spoon crushed garlic and ginger
- 1 spoon mixed spices
- 1 teaspoon turmeric
- 1 cup chickpeas
- 2 onions for the topping
- ¼ cup raisins
- 5 cardamom pods
- 2 cinnamon sticks
- 2 whole cloves
- 1 spoon tomato paste
- Salt and pepper
Steps:
- Cut the onions into wedges and fry them in a pan with dried lemons until golden brown.
- Cut the chicken in half.
- Add jalapeno, garlic, ginger, spices, turmeric, salt, and the chicken and stir constantly.
- Cook the chicken for about 10-15 minutes per side.
- Add cardamom, cloves, and cinnamon then add water and bring to a boil for 40 minutes.
- Remove the chicken and roast in an oily pan.
- Cook the rice in the broth.
- For the topping: soak the chickpeas in water for half an hour then cook for 15 minutes.
- Fry onions until golden brown, then add raisins, chickpeas, tomato paste, salt, and pepper.
