Vegetable Samosa


  • 1 pack samosa wrappers
  • 3 spoons flour
  • 2 chopped onions
  • 2 carrots finely diced
  • 2 potatoes finely diced
  • 2 stock cubes
  • Salt & pepper
  • ¼ bunch green coriander
  • 1 teaspoon spices
  • 1 teaspoon turmeric
  • 1 spoon cumin seeds
  • Salt
  • 1 cup cooked brown lentils (soak for 15 minutes, then cook for 20 minutes)


  • Heat the oil in a saucepan; add onions & cumin and fry gently until soft and slightly colored, then add carrots, potatoes, and salt then stir for 5 minutes.
  • Add salt, pepper, stock cubes, and water until it covers the vegetables.
  • Let boil for 20 minutes, add cooked lentils, spices, turmeric, and green coriander, stirring, and turn off the burner.
  • Fill with the mixture, moisten top inside edges of wrappers with a mixture of flour and water.
  • In a deep saucepan, heat oil and fry samosas, in batches, until golden brown, remove access oil with a paper towel, and serve hot.
