EMIRATI Dish

Vegetable Broth

Ingredients:

  • 3 onions
  • 2 medium tomatoes
  • 2 potatoes
  • 2 carrots
  • 2 green peppers
  • 1 small squish
  • 4 zucchinis
  • 2 eggplants
  • 2 hot green jalapeno
  • 1- ½ punch green coriander
  • Curry leaves
  • 2 spoons ghee and oil
  • 2 spoons crushed ginger and garlic
  • 1 cup coconut milk
  • 1 spoon mixed spices
  • Salt
  • Tomato Sause

Steps:

  • chop all vegetables into medium-sized pieces including onions.
  • in a stockpot over medium-high heat, melt the ghee and oil, add all the vegetables including the crushed ginger and garlic, and cook, while stirring add salt and cover the stockpot.
  • once the vegetables are almost cooked, add coconut milk and spices, let simmer for 40 minutes, and stir in between then.
