Pakora
Ingredients:
- 3 cups chickpea flour
- 3 cups all-purpose flour
- 2 onions
- 3 garlic cloves
- 2 red jalapeno peppers
- 2 spoons grated ginger
- A few curry leaves
- ½ bunch green coriander
- 3 eggs
- 1 spoon yeast
- 1 spoon turmeric
- 1 spoon mixed spices
- 1 eggplant, cut into small pieces
- 1 chopped tomato
- 1 grated carrot
- 1 potato sliced
Steps:
- In a bowl, mix white flour with chickpea flour, yeast, water, eggs, turmeric, salt, and spices, mix to form a smooth batter.
- Mix onions with peppers and all the vegetables, coat in the batter, and set aside for 30 minutes.
- Over medium-high heat in a large, heavy saucepan, heat the oil.
- Fry the pakora in small batches until golden brown, drain and serve hot.
