Pakora

Ingredients:

  • 3 cups chickpea flour
  • 3 cups all-purpose flour
  • 2 onions
  • 3 garlic cloves
  • 2 red jalapeno peppers
  • 2 spoons grated ginger
  • A few curry leaves
  • ½ bunch green coriander
  • 3 eggs
  • 1 spoon yeast
  • 1 spoon turmeric
  • 1 spoon mixed spices
  • 1 eggplant, cut into small pieces
  • 1 chopped tomato
  • 1 grated carrot
  • 1 potato sliced

Steps:

  • In a bowl, mix white flour with chickpea flour, yeast, water, eggs, turmeric, salt, and spices, mix to form a smooth batter.
  • Mix onions with peppers and all the vegetables, coat in the batter, and set aside for 30 minutes.
  •  Over medium-high heat in a large, heavy saucepan, heat the oil.
  • Fry the pakora in small batches until golden brown, drain and serve hot.
