Gulf Dish

Chicken Kabsa

Ingredients:

  • 1 whole chicken
  • 4 cups basmati rice
  • 3 chopped onions
  • 2 dried lemons
  • 1 hot jalapeno
  • 1 spoon crushed garlic and ginger
  • 1 spoon mixed spices
  • 1 teaspoon turmeric
  • 1 cup chickpeas
  • 2 onions for the topping
  • ¼ cup raisins
  • 5 cardamom pods
  • 2 cinnamon sticks
  • 2 whole cloves
  • 1 spoon tomato paste
  • Salt and pepper

Steps:

  • Cut the onions into wedges and fry them in a pan with dried lemons until golden brown.
  • Cut the chicken in half.
  • Add jalapeno, garlic, ginger, spices, turmeric, salt, and the chicken and stir constantly.
  • Cook the chicken for about 10-15 minutes per side.
  • Add cardamom, cloves, and cinnamon then add water and bring to a boil for 40 minutes.
  • Remove the chicken and roast in an oily pan.
  • Cook the rice in the broth.
  • For the topping: soak the chickpeas in water for half an hour then cook for 15 minutes.
  • Fry onions until golden brown, then add raisins, chickpeas, tomato paste, salt, and pepper.
